Salt in pizza dough – how much and why
2.8% salt isn't just about taste – it puts the brakes on fermentation. How much goes in, when it goes in and what happens if you forget it, step by step.
Quick answer: the house method uses 2.8 % salt by flour weight. AVPN 2024 specifies 40–60 g per litre of water, which for a normal Neapolitan dough works out at roughly 2.5–3.1 %. Salt isn’t just flavour – it slows the yeast and strengthens the gluten network, so the amount affects the whole fermentation time.
Why salt slows fermentation
Salt draws water out of the yeast cells by osmosis and slows their activity. That is an advantage, not a problem: without salt acting as a brake, a 48-hour cold fermentation would be overproofed after a single day. Salt also tightens the gluten network, making the dough more elastic and easier to stretch without it spreading out.
The order matters
AVPN requires that salt and yeast are never in direct contact for more than five minutes – otherwise the salt can damage the yeast cell walls locally before everything is mixed through. The house method dissolves the salt in the water before the yeast goes in, in exactly that order. Forget the salt altogether and the dough turns slack, tastes flat and oddly sweet, and ferments uncontrollably fast – expect it to be overproofed several hours ahead of schedule.
