A slack pizza dough is harder for a machine to knead than a firmer bread dough, because the dough is softer and the hook struggles more to grip and build gluten. For smaller batches, kneading by hand is often both faster and simpler than setting up a machine.
Why a slack dough is trickier for the machine
A bread dough with a lower water content has more resistance, which lets the dough hook grip easily and build gluten efficiently. A pizza dough at 65–70 % hydration is considerably slacker, and the hook can instead slide around in the dough without really working it — especially in machines with a weaker motor or a hook not shaped for wet doughs. Motor power and time
A lower-priced home machine can get hot or lose speed on a low setting during a long, heavy batch. Run several shorter intervals with a pause in between rather than one long continuous run if the machine feels strained, and avoid high speed — it builds gluten fast but also heats the dough up quickly, which disturbs the fermentation (see dough temperature).
When kneading by hand is actually simpler
For one or two batches of dough — say up to a kilogram of flour — kneading by hand is often faster in practice than fitting the dough hook, weighing everything out, running the machine and then washing it up. By hand you also feel the dough’s resistance directly and know exactly when the windowpane test is met, whereas a machine still requires you to stop and check manually. The machine’s advantage only grows at larger volumes, for example several kilograms of flour for a whole dinner party.
What to avoid
Never knead the dough to ”fully developed” the way you would a brioche or bread dough. Neapolitan pizza dough does well with a bit of remaining rawness in its structure, which gives the looser, more open crumb typical of the style — see gluten for what actually builds up during kneading.
