Flour on the peel – how much, and why not more

Why too much flour becomes its own problem

Flour that lands on a glowing-hot pizza stone or steel (450 °C+ / 840 °F+ in a wood-fired oven, see flour and oven) burns almost instantly. Burnt flour tastes sour and bitter and shows up as black grains — and they happily stick around on the stone or oven floor for the next pizza, where they burn a second time. The more flour you dust on ”just in case”, the bigger this problem gets over a whole baking session.

Minimise the flour through technique rather than quantity

The most effective fix isn’t more flour but faster work: top the pizza close to the peel and launch it within a minute, as described in pizza sticks to the peel. The shorter the dough sits on the peel, the less moisture has time to migrate down and make the surface sticky — and the less flour you need to dust on as a precaution. A quick shake test (jiggle the peel gently sideways) before you add the toppings shows whether the dough is already sliding as it should.

Semola or ordinary flour

Coarse semola stays non-sticky for longer than ordinary wheat flour (see semola), which means you can use a thinner coating and still get the same protection. A mix of semola and flour is a common compromise: semola for the glide, a little flour to bind and leave less visible dust on the finished base.

Roughly how much

Reckon on a scant teaspoon spread over the surface of the peel for a 28–30 cm pizza — enough to cover the surface thinly, not in a heap. If you need to dust on more midway through because the dough has started sticking, that’s often a sign you worked too slowly rather than that you needed more flour from the start.

Frequently asked questions

Is flour on the worktop enough if I bake straight on baking paper? Yes, then you skip the whole peel problem — but the base is often a little paler, since baking paper insulates against the direct heat from the steel or stone.

Why does flour burn but not semola, just as fast? Semola’s coarser, more intact starch structure holds up to heat slightly better than finely milled flour, but even semola eventually burns at the same extreme temperatures — the difference is gradual, not absolute.
