The dough collapses when I stretch it

The dough proofed nicely in the fridge and looked perfect, but collapses or sinks as soon as you start stretching it.

Most likely cause

The dough has gone too far (overproofed)

How you know: The ball is shiny, feels slack and thin even before you touch it, and the surface is covered in large, irregular blisters.

Do this: Stretch it extremely gently, using only your fingertips. Next time: a shorter fermentation or a cooler one – see overproofed dough.

Other possible causes

  1. Heavy-handed stretching that pushes out all the gas at once

    How to tell
    You press or roll out the whole surface, including the rim, instead of working from the centre and leaving the rim untouched.
    Fix
    Press only from the centre outwards with your fingertips, leave the rim completely untouched, and lift the dough over your knuckles instead of pulling it.
  2. The gluten network is already weak from the long fermentation

    How to tell
    The dough tears or stretches unevenly instead of stretching smoothly, even when handled carefully.
    Fix
    Bake this dough as it is, gently and with lower expectations for the rim. Next time: a shorter cold fermentation or a flour with a higher W value.

Quick answer: dough that collapses when you stretch it has either fermented too long, or the handling pushes out all the gas at once from a dough that already has a weaker gluten network after a long fermentation. Often it’s a combination of both.

The nerdy explanation

During fermentation, yeast builds up carbon dioxide in the gluten network while the network is gradually broken down by enzymes – that’s why a properly proofed dough is stretchy and springy, while an overproofed dough has already lost some of its structure before you even touch it. If you then stretch it roughly, pressing right out to the rim or using a rolling pin, the gas is released all at once instead of being saved for the rim, and a dough that’s already weak can’t hold its shape.

How do I know whether it's the fermentation or my hands that are to blame?

If the dough collapses before you've even touched it, or just as much in the middle as at the edges, it's usually the fermentation. If the problem only appears where you pressed hardest, it's the handling.
