Sticky dough you can’t handle

The dough sticks to your hands and the worktop, spreads out and refuses to be balled.

Most likely cause

Hydration too high for the flour

How you know: The dough is shiny and slack straight after kneading, and it spreads out even after resting for 15 minutes.

Do this: Drop the water to 60–62 % next time, or switch to a stronger flour. Right now: fold the dough two or three times with 15 minutes' rest in between instead of throwing in more flour.

Other possible causes

  1. The gluten isn't fully developed

    How to tell
    The dough tears when you pull it and won't turn smooth, even though the amount of water is normal.
    Fix
    Knead for a few more minutes or do two rounds of stretch-and-fold. Gluten binds the water – that's why the dough stops sticking.
  2. The dough is too warm

    How to tell
    The dough feels lukewarm and has already started to rise noticeably during kneading.
    Fix
    Use colder water so the dough ends up around 23–24 °C. A warm dough is softer and stickier than the same dough a few degrees cooler.
  3. Weak flour in a long fermentation

    How to tell
    The dough was fine when you balled it but has turned tacky and slack after a day or two in the fridge.
    Fix
    Shorter cold fermentation or a flour with a higher W value. The dough you have now: bake it today, it won't get any better.

Quick answer: sticky dough is almost never caused by missing flour. It’s usually water the flour can’t hold on to – hydration that’s too high, gluten that isn’t developed enough, or a dough that’s too warm.

The nerdy explanation

The proteins in flour form gluten when they get water and work. A finished gluten network holds the water in place, and then the dough stops sticking. If the network isn’t ready yet – or the flour is too weak for the amount of water – the water sits loose on the surface. That’s why resting and folding often help more than extra flour. The house method’s 65 % works well with a proper pizza flour, but with a weaker plain flour the same percentage can feel like soup.

Should I just add more flour?

A little on the worktop and your hands is fine. But if you knead flour into the dough you change the recipe – hydration drops and the dough gets drier and denser. Fold and rest instead.

Does oil on my hands help?

Yes, a thin film of oil or water on your hands makes the dough easier to handle without changing the recipe. Flour on the bench, moisture on your hands.
