The topping slides off the pizza

The topping slides off or slips to one side when you lift the pizza from the peel or pull the peel away during launching.

Most likely cause

Too much sauce or oil

How you know: There's a visible film of liquid between the sauce and the cheese, and the pizza feels heavy and wet when you lift it off the worktop.

Do this: Weigh instead of measuring in tablespoons – around 70 g of sauce and 6–8 g of olive oil is enough. Scrape off any excess before the pizza goes in.

  1. Wrong layering order

    How to tell
    Heavy toppings, for example lots of cheese or cured meats, sit directly on top of a thin or uneven layer of sauce with nothing binding the layers together.
    Fix
    Follow the order in topping order – heavier ingredients need to sit anchored in sauce and cheese, not loose on top of a thin layer.
  2. The dough was already sticky or too wet when stretched

    How to tell
    The problem starts before the topping goes on – the dough was hard to stretch and felt thin and slack on the worktop.
    Fix
    See sticky dough – fix the dough problem first, topping rarely stays put on an unstable base.

Quick answer: topping that slides off is usually down to too much liquid, the wrong order of layers, or a dough that was already too wet to build on. It’s rarely the lifting technique itself.

Sauce and melted cheese act as glue between the dough and the topping on top, but only up to a point – too much liquid makes the layers slide against each other like oil between two surfaces. If heavy ingredients are also placed directly on top of a sauce layer that’s too thin to support them, they have nothing to grip even before the pizza is lifted.
