Pizza in a home oven – a Neapolitan feel at 250 °C
Temperature, timing and shelf position in an ordinary home oven. How to get a bubbly crust and a fully baked base at 250–275 °C, step by step, no guesswork.
Quick answer: You won’t get to the wood-fired oven’s 60 seconds, but with the right kit and an adjusted dough an ordinary home oven at 250–300 °C (480–570 °F) can give a fully baked base and a bubbly crust in 4–8 minutes. The protocol below is the PizzaLovers house method.
The kit that makes the difference
A baking steel or a pizza stone stores heat and transfers it quickly to the underside of the dough – without one, an ordinary baking tray stores too little heat and the base turns soggy before the top has taken on colour (see soggy bottom). Put the stone or steel on the top or second-highest shelf, close to the grill element (broiler), to get as much heat from above as possible.
How to run the bake
Preheat the oven on full top and bottom heat for at least 45–60 minutes so the stone or steel is heated right through, not just the air. Then try switching on the grill element (or the pizza setting, if your oven has one) for the last 1–2 minutes for extra colour on top – how much difference that makes is set up as a test in grill setting in a home oven. Baking time usually lands at 4–8 minutes depending on temperature; see the full table in baking temperature.
Adjust the dough for the longer bake
A classic 65 % Neapolitan dough (Neapolitan pizza dough) can dry out during a home oven’s longer bake. See dough for 250 °C for the house-method adjustments to hydration and ball weight that compensate.
A steel-versus-stone comparison is set up in the planned test baking steel vs pizza stone. The whole process from dough to plate: Neapolitan pizza at home.
