A soft, pale base with no crunch

The base is pale, soft and chewy instead of crisp with brown patches.

Most likely cause

The baking surface wasn't hot enough

How you know: The steel or stone was preheated for less than 45 minutes, or the pizza was baked on an ordinary baking tray.

Do this: Preheat the steel or stone for at least 45–60 minutes at the oven's highest temperature.

Other possible causes

  1. Wrong position in the oven

    How to tell
The steel sits at the bottom, far from the heat above, and the top is done long before the base.
    Fix
Try the top or second-highest shelf position, so the top and the base finish at the same time.
  2. Toppings too wet

    How to tell
The base is soggy mainly in the middle.
    Fix
Less sauce and drained cheese – see wet pizza.
  3. The pizza rested on a cold surface

    How to tell
The base was crisp straight out of the oven but went soft after a while.
    Fix
Let the pizza rest on a wire rack for half a minute before cutting, not on a cold plate.

Quick answer: the baking surface was too cool, or the toppings were too wet. In a home oven, a properly preheated steel or stone makes the biggest difference.

The nerdy explanation

A crisp base needs the water on the underside of the dough to boil off quickly. That happens when the dough lands on a surface that stores a lot of heat and releases it fast. Steel conducts heat better than stone, and both beat a thin baking tray that cools down instantly. How big the difference between steel and stone is in an ordinary home oven is what the planned steel vs stone test is set up to measure.

Next time

Change one thing, not three.

  • Preheat the steel or stone for at least 45–60 minutes at the oven's highest temperature.
  • Try the top or second-highest shelf position, so the top and the base finish at the same time.
  • Less sauce and drained cheese – see wet pizza.

Frequently asked questions

Steel or stone?

Steel conducts heat faster and often gives a better base in a home oven. Stone is cheaper and more forgiving. Both are far better than a baking tray.

Does the fan setting help?

Fan heat dries the top faster but doesn't make the steel any hotter. The base is governed mainly by how hot the surface underneath is.
