Quick answer: Gas (LPG/propane) is the fastest route to 450 °C (840 °F) – often ready in 15–20 minutes with no fire to tend. The downside comes in cold winter weather: once the temperature gets down around freezing, the pressure in the cylinder drops and the flame weakens just when you need it most.

The everyday advantages

No wood to handle, no ash, an even and easily adjustable flame, and much faster heat-up than a wood-fired oven. If you want to bake pizza on a weeknight without planning ahead, gas is often the practical first choice – see the comparison in the best pizza oven.

The winter problem

At temperatures close to and below freezing, the pressure in an ordinary gas cylinder drops, which can give a weaker flame just when you need full power. Keep the cylinder a little warmer (for example indoors until you use it, never near an open flame) or use a larger-capacity cylinder in winter. Expect a standard cylinder to last several baking sessions before it needs replacing.
