Baking steel vs pizza stone – which one should you buy
Steel conducts heat faster and recovers quicker between pizzas; stone is cheaper and more forgiving. A property-by-property comparison to help you choose.
Quick answer: Steel conducts heat faster and usually gives a darker, crispier base in less time, and holds its heat better if you’re baking several pizzas in a row. Stone is cheaper, gentler on a beginner’s dough, and nearly as good if you’re only baking one pizza at a time. The difference shows up most when the oven is under heavy load – not on the very first pizza.
Heat conduction – why steel wins on paper
Steel has considerably higher thermal conductivity than ceramic stone (see pizza stone and baking steel), so it transfers heat to the underside of the dough faster. In theory that gives a faster-baked, more Neapolitan-coloured base (see leoparding) – but the same property also means steel can lose more heat, faster, between each pizza if it isn’t thick enough.
Dryness in the base
A very hot steel can, in a long home-oven bake (see baking temperature), dry out the base if the dough is left on it too long after it’s already coloured. Stone heats up more slowly and often gives a slightly more forgiving margin if you’re a minute or so late taking the pizza out – but the difference is about margins, not about one method guaranteeing a dry base and the other not.
Sensitivity – which copes best with rough handling
Steel doesn’t crack from thermal shock and can be preheated quickly or for a long time without harm. Stone can crack if it’s exposed to rapid temperature swings or moisture (see cracked pizza stone). On the other hand, steel can rust if it isn’t dried and cared for properly (see the care section in baking steel), while stone doesn’t have that problem.
Price and durability
A baking steel in a normal home size normally costs more than a comparable pizza stone, but in practice it doesn’t break from mishandling the way stone can. Stone is the cheaper way in, with the risk that you’ll need to replace it if it cracks.

Our recommendation based on how you bake
If you bake rarely, one pizza at a time: a pizza stone does the job nicely and is the cheaper way in. If you bake often, or several pizzas in a row for family or guests (see baking multiple pizzas in a row): a sufficiently thick baking steel holds its heat better through the whole run.

Frequently asked questions
Can I use both steel and stone at the same time in the same oven? There’s no clear advantage in that for an ordinary home baker – choose whichever suits how often and how many pizzas you bake, rather than combining both.
