Pizza on a baking sheet – the best result without special kit
A preheated sheet, flipped upside down, beats a cold one every time – even if it can't match a baking steel or stone. Technique and troubleshooting tips.
Quick answer: An ordinary baking sheet, flipped upside down and preheated for at least 20–30 minutes, gives a clearly better result than a cold sheet straight from the cupboard – but it stores less heat than a baking steel or pizza stone, and the base will never get quite as crisp.
Why a baking sheet doesn’t quite go all the way
An ordinary baking sheet is thin and stores considerably less heat energy than a thick baking steel or a fully heated pizza stone. It does heat up quickly, but it also loses heat quickly as soon as the cold dough goes on – the result is a softer, less crisp base even if you do everything else right.
The technique: the sheet upside down
Flip the baking sheet so the flat underside faces up, and put it in the oven from the start, exactly as with a stone or steel (see pizza in a home oven). The flat side gives more even contact with the dough than the sheet’s rimmed top side, and stops steam collecting at the edges. Launch the pizza from a peel dusted with semola or flour (see launching), sliding it straight onto the hot underside.
As close to steel and stone as you’ll get
With a properly preheated sheet, a high oven temperature and the right placement (high up in the oven, close to the grill element), you can get a fully decent home pizza – a fully baked base and a rim with some volume. What you won’t get is the same level of crispness and colour that a thick steel or a fully heated stone gives, because the sheet simply can’t store and release heat in the same way.
Tips for the best result without special equipment
- Run your oven’s highest setting and place the sheet on one of the top shelves.
- Preheat for at least 20–30 minutes – longer if you have time.
- Keep the amount of sauce and cheese a bit restrained so the base doesn’t turn soggy (see wet pizza).

An extra trick: stack two sheets
If you have two matching baking sheets at home, you can stack them on top of each other (both upside down) to mimic a bit of a thicker surface’s heat storage. It’s not the same as a real baking steel, but the extra mass means the sheet loses less heat when the cold dough goes on, which can give a slightly more even base.
Baking paper or flour/semola
Baking paper is the simplest way to stop the dough sticking, but it also insulates some of the contact between sheet and dough, which can make the base slightly less crisp.
