The grill element – when it helps and when it burns the cheese

The grill element can fix a pale top in the last minute, or burn the cheese if you switch it on too soon. How to use it, and how it differs from the pizza setting.

Quick answer: The grill element gives off intense radiant heat straight from above and can help colour the rim and cheese in the last minute – but switch it on too early or leave it on too long and it will burn the cheese before the base has even finished baking. What the grill element actually does

Unlike ordinary top-and-bottom heat, which warms the air throughout the whole oven cavity, the grill element gives directed radiant heat downward onto whatever sits right beneath it. It’s the same principle that lets a pizza closest to the element colour quickly, while the base (heated by the stone or steel, see pizza in a home oven) isn’t affected in the same way at all.

When it helps

In a home oven, the floor heat (stone or steel) often finishes the base before the top has given the cheese and rim enough colour – see the whole imbalance described in burnt bottom, pale top. Here, the grill element can be switched on for the last 1–2 minutes to even out that difference and give a more Neapolitan finish on top, without extending the whole bake unnecessarily.

When it burns the cheese

The grill element’s radiant heat is intense and acts fast. Switch it on too early, or leave it on too long, and the cheese and rim can burn black long before the base is fully baked through – especially if your oven’s grill element is powerful. The risk is greatest in ovens where the grill element sits close to the pizza’s surface.

How to test your own oven

Bake the same dough and topping twice: once with only top-and-bottom heat, once with the grill element switched on for the last 1–2 minutes. Compare the colour of the base and the top, and the total time. That’s exactly the same principle our planned test grill setting in a home oven is built on – with a steel, an infrared thermometer and repeated runs, since the grill element’s effect varies hugely between oven models.

Grill or pizza setting – not the same thing

Don’t confuse the grill element with a dedicated pizza setting. The pizza setting usually combines bottom heat with fan circulation for an even floor temperature throughout the bake, while the grill element is a short, directed extra effort from above, entirely separate from that. They can be used one after the other in the same bake – pizza setting or ordinary top-and-bottom heat first, then the grill element for the last minute – but they solve different problems.

What you lose if you run the grill the whole time

Beyond the risk of burning the cheese completely, you also lose control over how the base and top bake in step with each other. A pizza baked only under the grill element often ends up with an unevenly burnt surface, while the base hasn’t had anything like the same heat from below – giving the opposite imbalance to burnt bottom, pale top: now it’s the top that’s burnt and the base that’s lagging behind.

Frequently asked questions

Should I have the grill element on for the whole bake? No – that risks burning the top long before the base is done. Run ordinary top-and-bottom heat (or the pizza setting) for most of the time and save the grill element for the end.

Does it work the same way in every oven? No. The grill element’s power and distance from the pizza vary a lot between oven brands and models, which is exactly the limitation our planned test flags – so always test your own oven before relying on a fixed time.
